This brown tablet is delicious and a great favourite. Take 3lb of castor sugar, 3-oz fresh butter, a small time of condensed milk, 1 cupful of fresh milk, 1 heaped tablespoonful of syrup and 1 dessertspoonful of vinegar. Put sugar, butter, syrup and fresh milk into an enamel lined pan and melt very slowly (don't allow to boil until thoroughly melted). When boiling add the condensed milk, stirring all the time, boil for 20 to 30 minutes, and then add the vinegar. Remove from the fire and beat for five minutes, before pouring into greased tins. Take 1lb of cooked potatoes, 2oz of dripping, 1lb Spanish onions, a little hot milk, salt and pepper. Mash the potatoes with the hot milk until they are creamy and season with salt and pepper. Whist they are cooking peel and slice very thinly the onions. Melt the dripping and fry the onions until they are very dry and crisp. Take 14oz tin of baked beans, 2 rashers of streaky bacon, 1 tomato and 1 small onion, pinch of dry mustard and grated cheese. Mix the beans thoroughly with the chopped onion and tomato and bacon (cut into pieces). Season and put the mixture in a pie-dish. This loaf is excellent served with salad, or it can be curried and surrounded by rice. Mrs Robertson, Creiff. Combine in a large bowl 1lb. mince, ½ a cup of dry breadcrumbs, ¼ cupful milk, 1 well beaten egg, I finely chopped small onion, ¼ cup parsley, ½ teaspoonful salt, ¼ teaspoonful paprika and mix well. Place in a casserole dish and shape into a loaf. Mark into six servings, cutting down almost to the bottom of the loaf with a knife. Tuck one slice of cheese into each cut. A delicious light sponge - Mrs MacDiarmid, Stirlingshire. Take ¼ cupful butter, ¾ cupful castor sugar, 2 eggs, 1 cupful flour, 1 heaped teaspoonful baking powder and 2 bananas. Cream the butter and sugar, add egg yolks and beat well, then the flour, baking powder and mashed bananas. Lastly fold in stiffly beaten egg whites. Quick to make and very good. Jane Carmichael, Argyll. Your require ½ lb block cooking chocolate (milk), 1 large or 2 small eggs, ¼ lb castor sugar, ¼ lb fine coconut and 2 oz chopped cherries. Melt the chocolate, put in Swiss roll tin and leave to firm (few minutes). Beat the egg and sugar till light and frothy, fold in the coconut and cherries and spread on top of the chocolate, pressing down evenly with a fork. Bake in a moderate oven 25-30 minutes. This can be baked in cups, turned out and served with a sweet sauce - Mrs J. Clark, Carmyllie. Take 8oz self-raising flour, 2oz butter or margarine, a pinch of salt, 3 tablespoons of marmalade, 4oz sugar, 1 egg and a little milk if needed. Put the flour and salt in a basin, rub in the butter and add the sugar. Beat the egg, stir in the marmalade and mix all the ingredients. If the marmalade is stiff, a little milk may be required. Can be reheated without spoiling - Mrs Cooper, Orkney. Take 8 oz. Short-crust pastry; line the bottom of an 8-inch shallow tin, keeping some for the lid. Layer with 4 sliced hard boiled eggs, 2 peeled and sliced tomatoes and 4 thin rashers of bacon. Cover with pastry lid and bake for 30 minutes in a hot oven.
