Steak Roll 1954

Take 1lb of Stewing Steak, 2oz Dripping, 3 tblsp breadcrumbs, 1oz suet, 1 egg, Juice of half a lemon, Salt & pepper Have the steak cut in one piece. Make a stuffing from the breadcrumbs, suet, egg, lemon juice and salt and pepper. Lay the stuffing on the steak, roll up and tie loosely. Heat the dripping on a baking tray, add the meat and cook in a moderate oven for 1½ hour. Serve with gravy. Read more......

Orange Fruit Cakes 1954

  • 6 oz flour
  • 10 oz ground almonds
  • 3 oz orange peel
  • 2 oz currants
  • 4 oz sultanas
  • 3 oz castor sugar
  • 8 oz butter or marg
  • Half teaspoon baking soda
  • 1 egg
  • A few almonds
  • Rind and juice of one large orange

Ginger Slices 1979

Take 6 oz self raising flour, four level teaspoonfuls ground ginger, one egg, 4 oz butter, 3 oz castor sugar, two table-spoonfuls ginger marmalade. Sieve flour and ginger and rub in butter. Add sugar and enough egg to bind mixture together. Turn on a lightly-floured surface and knead until smooth. Divide into half and form two square to fit into a greased 7 inch square tin. Place one piece in the tin and spread with the marmalade then place the remaining piece on top. Bake in moderate oven for 50 mins. Turn onto a wire tray to cool. Prune Shape 1905

Stew 1lb of prunes, half a pound of sugar and a few strips of lemon peel til tender. Take out the stones and dissolve in 6 leaves of gelatine, put in a mould to firm. Make 1 pint milk and 2 eggs into custard, let it stand in oven until firm, when cold cut into shape and set round the prunes in a glass dish. Read more......

Crisp Apple Fritters 1905

2 eggs beaten separately, one teacupful of sweet milk, two cupfuls of flour, a good pinch of salt. Beat the yolks well, then add milk and flour gradually, then the salt. Beat eggs white until thick. Pare apple and cut into quarters and slice very thinly. Stir apples into batter. Cook in very hot oil, drain and sprinkle with castor sugar and serve hot. Read more......

Date and Walnut Loaf 1930

Instead of cake you might like this on the table occasionally. It is nourishing and nice. E.S. McIntyre of Edzell has found it a great favourite in her house. Take ¼ dates. Remove the stones and chop up. Then rub ¼ lb of marg into 1 lb of flour. Then mix together ¾ teacup of sugar, 2 teaspoons baking powder, ¼ lb chopped walnuts then add in ½ cup of milk and 1 egg well beaten. A Delicious Supper 1955

A pair of cotton sheets is awarded to Mrs Morrison, Balgay Cottage, Tealing for this recipe. She says it is so tasty for supper:- You require 1lb sausages, 1 tin beans, 4oz pineapple and 1 teaspoon of mustard. Place sausages in cold stew pan and cover, cook over a low heat for 10 mins, until most of the fat has cooked out. Meanwhile combine beans and mustard in a shallow casserole. Cut the pineapple into pieces and arrange on top of beans, top with sausages and bake in a moderate oven for 20 minutes. Read more......

Coffee and Walnut Cake 1955

Cream 4 oz margarine and 4 oz caster sugar. Add in two beaten eggs, 2 dessertspoons coffee essence, 2 dessertspoons milk. Mix in 6 oz plain flour, 2 teaspoons baking powder and 2 oz chopped walnuts. Beat well and divide between two 7 inch sandwich tins. Bake in a moderate oven. When cool sandwich together with coffee butter cream - 4 oz icing sugar, 2 oz butter and a dessertspoonful of coffee essence. Spoon on top and sprinkle with halved walnuts. Read more......

Cheese and Ham Loaf 1955

This is a delicious filling for sandwiches. You require 4oz of grated cheese, 1 egg, 6oz breadcrumbs, 6oz lean boiled ham, 1 dessertspoonful of tomato sauce, salt and pepper, a little milk and a pinch of cayenne pepper. Chop the ham finely and mix with all the dry ingredients. Stir in the tomato sauce and mix to a fine dough with the egg and milk. Turn into a greased baking tray, press and dot with butter pieces. Tasty Fried Tomatoes 1980

Sprinkle salt, pepper and sugar on tomatoes before frying them. For a different flavour, top with minced chives mixed with butter. Read more......
