Peel and finely chop the onion. Wash dry and chop the mushrooms. Heat butter in frying pan, add onion and mushrooms and cook for 3 minutes until tender. Season with the celery, salt and pepper. Remove pan from the heat and cool for a few minutes, add the soft cheese and mix well. Stir in the chopped parsley. Place ham slices out flat. Spread two to three spoons of the filling on each slice of ham. Roll up and fasten with a toothpick. Cover and chill for 30 minutes. To serve, cut each roll in half and place a piece of pineapple on top of each roll and brush with a little pineapple juice. Miss Clarke, Aboyne.
