Take ¼lb fine oatmeal, 2oz medium oatmeal, 2oz flour, 2oz dripping, 1oz sugar, good pinch of salt, I heaped teaspoon of baking powder, 1 gill milk. Take 8oz, 1 and half oz melted margarine, 1oz sugar, half a gill milk, 1 small egg, 1 teaspoonful cream of tartar and half teaspoon bicarbonate of soda and a pinch of salt. For the caramel 2oz butter and 2oz moist brown sugar. Sift together the flour, salt, cream of tartar, bicarbonate soda, sugar and mix well. Add the melted butter egg and milk to make a stiff dough and mix thoroughly. Turn on to a floured surface and knead lightly. Roll out half an inch thick and cut with a cutter. Cram the brown sugar and butter together in basin. Put a big spot on the top of each scone and bake in a hot oven for 10 –15 minutes. Read more......
This is a very tasty dish for a hot supper if unexpected visitors drop in. It can be made in a hurry and takes only half an hour to cook, - Mrs W. Eaglesham, Stranraer, Wigtownshire. You require 1lb sausages, 1 tablespoonful of breadcrumbs, three tomatoes (skinned and sliced), salt to taste, one egg beaten in a little milk and brown breadcrumbs. Put layer of sausages in an ovenproof dish, spread over the breadcrumbs and cover with the slices of tomatoes. Repeat these layers until all used. Keep sausages for the top and lastly sprinkle over the brown breadcrumbs. Beat the egg and milk together and pour over. Cook in a moderate over for half an hour. Read more......

Take three large potaotes peeled and grated, two rashers bacon cut up with scissors, three tomatoes, sliced (onions maybe used instead or as well) two beaten eggs, two tblsp oatmeal, 2oz fat, salt and pepper. This is a delicious filling for sandwiches. You require 4oz of grated cheese, 1 egg, 6oz breadcrumbs, 6oz lean boiled ham, 1 dessertspoonful of tomato sauce, salt and pepper, a little milk and a pinch of cayenne pepper. Chop the ham finely and mix with all the dry ingredients. Stir in the tomato sauce and mix to a fine dough with the egg and milk. Turn into a greased baking tray, press and dot with butter pieces. Cream 4 oz margarine and 4 oz caster sugar. Add in two beaten eggs, 2 dessertspoons coffee essence, 2 dessertspoons milk. Mix in 6 oz plain flour, 2 teaspoons baking powder and 2 oz chopped walnuts. Beat well and divide between two 7 inch sandwich tins. Bake in a moderate oven. When cool sandwich together with coffee butter cream - 4 oz icing sugar, 2 oz butter and a dessertspoonful of coffee essence. Spoon on top and sprinkle with halved walnuts. Read more......

She says it is so tasty for supper:- You require 1lb sausages, 1 tin beans, 4oz pineapple and 1 teaspoon of mustard. Place sausages in cold stew pan and cover, cook over a low heat for 10 mins, until most of the fat has cooked out. Meanwhile combine beans and mustard in a shallow casserole. Cut the pineapple into pieces and arrange on top of beans, top with sausages and bake in a moderate oven for 20 minutes. Read more......
