Take 1 tablespoon raisins, 8oz self raising flour, 6oz margarine, 4 medium bananas, 2 eggs, 2oz castor sugar, 1oz granulated sugar, 1 tablespoon lemon juice, 4 tablespoon milk and ½ teaspoon cinnamon. Heat the oven to 350 degrees. Brush a shallow 7 inch square tin with melted fat.
Place the raisins in a pan and cover with cold water, bring to the boil, then drain. Put flour in bowl and rub in margarine, stir in the 2oz castor sugar, beat the eggs and milk together, add to bowl, beat all for 1-2 minutes. Peel and mash bananas stir in granulated sugar. raisins, cinnamon and lemon juice. Place slightly less than half the flour mix into tin and make level. Spread the banana mix over the top them drop the rest of the flour mix over the top and make level. bake for 35-40 minutes until top is slightly browned. Serve with cream or custard.
