Savoury Rice 1904

Rice leftover from another dish can be made into an excellent savoury. Heat the grains by pouring boiling water over them in a large basin. Melt butter in a frying pan, add a little beef extract, salt, red pepper and a few drops of worcester sauce. Strain the rice well and put into the butter mixture. Steak Roll 1954

Take 1lb of Stewing Steak, 2oz Dripping, 3 tblsp breadcrumbs, 1oz suet, 1 egg, Juice of half a lemon, Salt & pepper Have the steak cut in one piece. Make a stuffing from the breadcrumbs, suet, egg, lemon juice and salt and pepper. Lay the stuffing on the steak, roll up and tie loosely. Heat the dripping on a baking tray, add the meat and cook in a moderate oven for 1½ hour. Serve with gravy. Read more......

A Delicious Supper 1955

A pair of cotton sheets is awarded to Mrs Morrison, Balgay Cottage, Tealing for this recipe. She says it is so tasty for supper:- You require 1lb sausages, 1 tin beans, 4oz pineapple and 1 teaspoon of mustard. Place sausages in cold stew pan and cover, cook over a low heat for 10 mins, until most of the fat has cooked out. Meanwhile combine beans and mustard in a shallow casserole. Cut the pineapple into pieces and arrange on top of beans, top with sausages and bake in a moderate oven for 20 minutes. Read more......

Cheese and Ham Loaf 1955

This is a delicious filling for sandwiches. You require 4oz of grated cheese, 1 egg, 6oz breadcrumbs, 6oz lean boiled ham, 1 dessertspoonful of tomato sauce, salt and pepper, a little milk and a pinch of cayenne pepper. Chop the ham finely and mix with all the dry ingredients. Stir in the tomato sauce and mix to a fine dough with the egg and milk. Turn into a greased baking tray, press and dot with butter pieces. Tasty Fried Tomatoes 1980

Tomato au Gratin 1980

Take 4 to 6 tomatoes, 2 oz grated cheese, pepper and salt. Scald tomatoes in boiling water and remove the skin. Leave while or cut in slices. Place in a fire-proof dish; season with salt and cover with the grated cheese. Put into a hot oven for about 10 mins till brown on top. Read more......

Princess Potatoes 1931

This is a very nice dish that would be welcome at supper-time ... Take ½lb cooked potatoes, 1oz butter, 1oz grated cheese, salt and pepper, yellow of an egg and a little milk. Mix all ingredients in a basin, then form into little fingers and brush with egg. Flour an oven plate, place on the fingers and brown in the oven. Manx Rarebit 1956

Take three large potaotes peeled and grated, two rashers bacon cut up with scissors, three tomatoes, sliced (onions maybe used instead or as well) two beaten eggs, two tblsp oatmeal, 2oz fat, salt and pepper. Melt the fat and fry onion, bacon and potato quickly then add the tomato, oatmeal and salt and pepper then stir in the eggs. Brown under the grill. Read more......
