Butterscotch Rice Pudding

This is indeed a rich pudding, and people who are tired of ordinary rice pudding will appreciate this.

Take 2 heaped tablespoons whole rice, 2 tablespoons crushed butterscotch, 1 quart milk, 1 teaspoon vanilla essence, a little grated nutmeg, 2 tablespoons brown sugar, 1 tablespoon margarine, salt. Read more......

Banana Cream

This is a favourite dish. Mrs E. Rennie, Arbroath, is the sender of the recipe.
Peel and mash 5 large bananas until smooth them beat in 5 teaspoonfuls of icing sugar till free from lumps. Now whip up a cup of cream until stiff and mix with the banana pulp. Dissolve a packet of orange jelly in ¾ pint boiling water and leave till cold. Stir in cream and pour into a wet mould, leave till set. Serve with whipped cream.

Dumbiedykes Pudding

Stews some rhubarb with plenty of water and sugar. Put into your pudding dish a layer of bread, then pour on the hot rhubarb, them another layer of bread, then rhubarb, till the dish is full. Now put an ashet on top and set away for 24 hours in a cool place. This served cold with sugar and cream on a hot summer’s day is delicious. Read more......

Steamed Pineapple and Chocolate Pudding 1960

The fine fresh flavour our winter favourite - Mrs D. Lumsden, Bute. Take 1 medium sized tin of pineapple, 4oz flour, 4oz breadcrumbs, 5oz sugar, 1½ teaspoonfuls baking powder, 2 eggs, 3oz shredded suet, 1½ tablespoons of cocoa and a little milk.  Read more......

Potato Rumble 1935

Take 1lb of cooked potatoes, 2oz of dripping, 1lb Spanish onions, a little hot milk, salt and pepper. Mash the potatoes with the hot milk until they are creamy and season with salt and pepper. Whist they are cooking peel and slice very thinly the onions. Melt the dripping and fry the onions until they are very dry and crisp. Put the mashed potato into a hot vegetable dish and cover the top with a thick layer of fried onions. Serve. Read more......

Caribbean Banana Pudding 1982

Take 1 tablespoon raisins, 8oz self raising flour, 6oz margarine, 4 medium bananas, 2 eggs, 2oz castor sugar, 1oz granulated sugar, 1 tablespoon lemon juice, 4 tablespoon milk and ½ teaspoon cinnamon. Heat the oven to 350 degrees. Brush a shallow 7 inch square tin with melted fat. Read more......

Rice and Banana Jelly 1982

Take a cupful of ground or whole rice, four bananas, one tablespoon of jelly, half a glass port wine, milk and sugar. Put the rice on to boil with a little milk and sugar. When ready pour into crystal dish, cut bananas lengthwise and put onto the rice. Melt the jelly in 1 pint water and the wine, when melted pour over the rice and banana mix. Pineapple Sweet 1907

Get a tin of pineapple chunks and heap them up like a pyramid in a dish. Then take the syrup and add sufficient gelatine dissolved to make a stiff jelly also add a few drops of cochineal to colour it. Put in a basin to cool and when set break up and arrange tastefully among the chunks. Just before sending to table pile whipped cream on top and strew a few hundreds and thousands over and serve. Read more......
