Treacle Toffee 1953

Take 1 lb treacle, 1 lb sugar, ½ lb butter. Put butter in pan with a few drops of water, add sugar then treacle, stirring gently until dissolved. Boil for 30 minutes, stirring occasionally to prevent burning. Pour into a well-buttered tin and mark into squares before it cools. Wrap each piece in waxed paper.

Orange Fruit Cakes 1954

  • 6 oz flour
  • 10 oz ground almonds
  • 3 oz orange peel
  • 2 oz currants
  • 4 oz sultanas
  • 3 oz castor sugar
  • 8 oz butter or marg
  • Half teaspoon baking soda
  • 1 egg
  • A few almonds
  • Rind and juice of one large orange

Ginger Slices 1979

Take 6 oz self raising flour, four level teaspoonfuls ground ginger, one egg, 4 oz butter, 3 oz castor sugar, two table-spoonfuls ginger marmalade. Sieve flour and ginger and rub in butter. Add sugar and enough egg to bind mixture together. Turn on a lightly-floured surface and knead until smooth. Divide into half and form two square to fit into a greased 7 inch square tin. Place one piece in the tin and spread with the marmalade then place the remaining piece on top. Bake in moderate oven for 50 mins. Turn onto a wire tray to cool. Date and Walnut Loaf 1930

Instead of cake you might like this on the table occasionally. It is nourishing and nice. E.S. McIntyre of Edzell has found it a great favourite in her house. Take ¼ dates. Remove the stones and chop up. Then rub ¼ lb of marg into 1 lb of flour. Then mix together ¾ teacup of sugar, 2 teaspoons baking powder, ¼ lb chopped walnuts then add in ½ cup of milk and 1 egg well beaten. Coffee and Walnut Cake 1955

Cream 4 oz margarine and 4 oz caster sugar. Add in two beaten eggs, 2 dessertspoons coffee essence, 2 dessertspoons milk. Mix in 6 oz plain flour, 2 teaspoons baking powder and 2 oz chopped walnuts. Beat well and divide between two 7 inch sandwich tins. Bake in a moderate oven. When cool sandwich together with coffee butter cream - 4 oz icing sugar, 2 oz butter and a dessertspoonful of coffee essence. Spoon on top and sprinkle with halved walnuts. Read more......

  • 2 cupfuls of flour
  • 1 heaped teaspoon baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1½ cupfuls of milk
  • 2 tablespoons marmalade
  • 2 tablespoons melted butter

Gingerbread 1931

The children will be the better of this wholesome cake at teatime ... Take 1lb flour and mix in 2 teaspoonfuls of ground ginger, 2 teaspoonfuls cinnamon, 1 teaspoon bicarbonate soda, 6 oz sugar. Melt the butter in a ½ lb of golden syrup. Have 6 oz currants well washed and dried, 3 oz candied peel finely chopped and add to the dry ingredients.   • 3 tbls orange juice
  • 10 tbls evaporated milk
  • 1 large packet digestive biscuits
  • 12 oz sultanas
  • 4 oz mixed peel
  • 4 oz glaced cherries
  • 4 oz walnuts
  • ½ teas cinnamon
  • ½ teas nutmeg

Fluffy Scones 1932

These are delightful and especially so if spread with honey. Take ½ lb flour, 1½ teaspoons sugar, 1 oz margarine, 1 teaspoon of cream of tartar, ½ teaspoon baking soda, pinch of salt and a little sour buttercream. Mis together all the dry ingredients, rub in the margarine and add the milk to make a medium dough. Roll out on a floured board and cut into shape. Bake on a hot girdle. Read more......

Coconut Rolls 1957

You can make them in a jiffy - Mrs J. McLeod, Clifburn Road, Arbroath. Empty a small can of condensed milk into a bowl. Stir in coconut until the mixture is stiff. Form into rolls them roll in coconut. Decorate each with a cherry or angelica and place on greased baking sheet and bake in a moderate oven until golden brown in colour - about 20 minutes. Read more......
